I was a little curious to see whether I could keep up my healthy eating while in Zambia... well it turns out that fruit and veg is sold everywhere. Not only that... as soon as I stepped foot in Kitwe, I was given bagfuls of home grown lettuces, egg plants, peppers and fresh herbs.... it's taken us ten days to finish it off !! And ... of course had to try the Zambian watermelons. Love the way all the fruit and veg are neatly stacked in pyramids. These naughty fellows stole our mandarins.
