Raw Chocolate Chia Energy Bars

Whole chia seeds add nutritional punch and crunch to these chocolate treats. Makes 8 bars

Ingredients:
  • 1 ½ cups pitted dates
  • ⅓ cup raw unsweetened cocoa powder
  • ⅓ cup whole chia seeds
  • ½ tsp. vanilla extract, optional
  • ¼ tsp. almond extract, optional
  • 1 cup raw slivered almonds or raw shelled pistachios
  • Oat flour for dusting, optional

Method: 
1. Place dates in bowl of food processor; purée until thick paste forms. Add cocoa powder, chia seeds, and vanilla and almond extracts, if using. Pulse until all ingredients are combined. Add almonds; pulse until nuts are finely chopped and well distributed through date mixture.

2. Spread large sheet of wax paper on work surface, and dust with oat flour, if using. Transfer date mixture to wax paper, and use paper to press mixture into ½-inch-thick rectangle. Wrap tightly, and chill overnight.

3. Unwrap block, and cut into 8 bars. Dust edges and sides with oat flour, if using, to prevent sticking. Rewrap each bar in wax paper.

Date, Macadamia and Cacao Cookies

Ingredients 10 portion(s)
  • 1 Cup fresh dates, Seed removed
  • 1 Cup Macadamia Nuts
  • 1 tablespoon cacao powder




Recipe's Preparation dough

1. Place all ingredients into bowl

2. 20-30 Seconds on speed 10, or until dough forms

3. Roll into balls (size to your liking)

4. Press each ball with fork to flatten on baking tray lined with with baking paper for lightly greased.

5. Bake in a Moderate Oven 180oC for 10 mins. These cook very quickly so watch them when you pull them out they wont look cooked but will harden slightly once cool. They are a soft biscuits though!

Tip VARATION: Instead of Cacao you can use 1 Tablespoon Ground Ginger to make them into Ginger biscuits.

Chia Power Bars

  • 2 cups of old fashioned oats
  • 1 cup pitted prunes - you could also use cranberries, dates, raisins, apricots, essentially any dried fruit!
  • 1/4 cup chia seeds
  • 3 tbsp coconut oil
  • 2 tbsp almond milk - any non-dairy milk will work
  • (optional agave or stevia for sweetness, to taste)
  1. Line a 8x8 square pan with two pieces of parchment paper, one going each way - this will allow the bars to release from the pan and be lifted out.
  2. Place the oats in the food processor and pulse for 10-15 seconds. 
  3. Add the rest of the ingredients and pulse until the mixture comes together. Be patient. About 3 minutes. 
  4. Press the mixture evenly down into the pan.
  5. Freeze for about 15 minutes, then cut into 10 pieces. Store in an air tight container. You can also wrap them in plastic wrap and store in the refrigerator for on-the-go! Enjoy!
