3/4 cup skimmed milk 1/4 cup cheddar cheese or goat's cheese like feta or halloumi 1 tsp olive oil 2 medium zucchini shredded or chopped into small cubes 1/4 cup onion 2 large mushrooms chopped into cubes salt, pepper 1/2 tsp oregano Saute all the vegetables with a little bit of olive oil. Beat eggs, milk, cheese, salt and pepper and oregano. Add sauted vegetables to egg mixture and mix well. Spoon into 6 - 8 muffin cups and bake at 180C for 20 - 25mins or until golden brown. Enjoy ! |
