17/1/2013 1 Comment Why You Got FatInsulin is the most important hormone in terms of the metabolism of fat and sugar, and our energy balance. Insulin is produced in the pancreas, which is situated in the abdomen, behind the navel.
Insulin is an important hormone yet too much of it is not good for the body. Too much insulin has a negative effect on our metabolism which makes you fat but it also leads to the production of 'bad' eicosanoids, which will deteriorate your health. Insulin makes sure that the cells take up blood sugar, our most important source of energy. It is used immediately, transformed into glycogen which is stored in the liver for future use or turned into fat. The higher the blood sugar, the more insulin the body produces in order to deal with it. The body depends on stable blood sugar levels and in order to keep them stable it uses a complex system of different hormones including insulin, glucagon, cortisol, adrenaline and growth hormone, to mention a few of them. How Insulin Makes You Fat. Let's presume that you eat a sandwich that provides you with carbohydrate (starch) from white flour and fat from cheese. The carbohydrates are broken down into glucose molecules, absorbed and turned into blood sugar. The pancreas then secretes insulin which is usually low before meals. If you have not been recently physically active, or exercised while you ate (not many us do that !), most of the blood sugar will be stored as fat, especially around the waist. The fat from the cheese will be absorbed in the small intestine in the form of triglycerides. The fat cells produce a hormone called leptin and an enzyme called lipoprotein lipase (LPL), which is important for fat metabolism. This enzyme 'opens the door' for fat cells to take up fat so that they can be stored. The more LPL that is produced, the more fat will be taken up and the more your weight will increase. Please make an important note here that insulin determines how much LPL is available. This shows why it is so important to avoid having too much insulin in your body and why you should avoid eating a combination of high-glycemic carbohydrates (e.g. white bread, pasta, pastries, white rice) and fats such as cheese. Eaten separately the effect is not as harmful. Insulin has several other effects, too. Being an anabolic hormone (which means that it is responsible for storing energy), it makes sure that the body does not expend too much energy. This means that as long as you have too much insulin in your blood, your body will not burn fat; but prefer to store it. Fat cells are influenced by another enzyme, hormone-sensitive lipase. The more you have of this enzyme, the more fat will be released from the fat cells for burning and the more weight you will lose. And, in turn the more insulin in your blood, the less hormone-sensitive lipase and the less fat available for burning. If you are obese or are in the early stage of type II diabetes (i.e. insulin resistance), your insulin level is constantly too high, even when you have not eaten anything. This explains why your body becomes a very efficient fat-storage machine. If you are caught in this vicious circle of too much insulin - a situation that grows worse every time you eat carbohydrates with a high GI and a lot of fat - you are bound to gain weight, even if you eat less than before. And to make matters worse, fluctuating blood sugar levels will lead to an increased appetite, especially sugar cravings. So in conclusion - too much insulin makes you fat ! Pesticides: Many carcinogenic pesticides - including BHC, chlordane, DDT, dieldrin, heptachlor, HCB, and lindane - accumulate in the most fatty dairy products (e.g. butter, ice cream, whole milk and high fat cheeses). Animal Drugs: Antibiotic residues may be found in dairy products, yet the drugs of major concern are the Sulfa drugs in dairy cows. Sulfamethazine is carcinogenic and its residues are often found in milk. Other drugs which have been found in milk are chloramphenicol which can cause the often fatal blood disease aplastic anemia. Dioxin: is a by product of the process used to bleach paper products at pulp and paper mills and has passed from the cartons to the milk. Dioxin's carcinogenicity is up to 500,000 times more potent than that of DDT. rBGH (Recombinant Bovine Growth Hormone): This poses harsh effects upon the animals and causes serious health risks to the consumers: * Increased levels of cell-stimulating insulin-like Growth Factor - 1 (IGF-1), apparently identical to those in humans have been reported in rBGH milk. These could induce premature growth in children and possibly promote colon cancer and breast cancer in women. * Increased bacterial infections in rBGH cows require treatment with antibiotics that will pass into the milk. This is likely to result in antibiotic-resistant infections in the general population. Also, the stress effects of rBGH in cows could surpress immunity and activate latent viruses, such as bovine leukemia and bovine immunodeficiency viruses, which are related to cancer and the AIDS complex and may be infectious to humans. * Steroids and adrenaline-type stressor chemicals induced in cows by these hormones are likely to contaminate milk and may be harmful, particularly to babies and young children. * As previously mentioned the fat and milk of cows is already contaminated with a wide range of carcinogenic contaminants, including dioxins and pesticides. rBGH reduces body fat and is likely to mobilise these carcinogens into the milk, with cancer risks to consumers. Radiation: Milk is a prime route by which consumers are exposed to radioactive contaminants released by nuclear plants. Milk is especially dangerous because it is quickly marketed, and short-lived radioactive isotopes are still present when it is consumed. Milk is associated with increased risk for breast cancer, and the combination of pesticides and radiation have been proposed as one possible explanations. If your dairy is near a nuclear plant, don't use their products. Carcinogens in Processed, Preserved Foods. Additives: Avoid products with coal tar food colours, potassium bromate and BHA. Preserved Foods: Avoid cured meats which contain nitrite preservatives. Pesticides: In general, carcinogenic pesticides concentrate in processed foods. Brands using organic ingredients are preferable, so are nonfat and low-fat brands. Carcinogens in Desserts and Snacks Pesticides: Milk chocolate is highly contaminated with residues of BHC and lindane. Peanut butter is highly contaminated with carcinogenic pesticides, such as DDT, dieldrin and toxaphene. Peanuts can also be contaminated with the fungus aflatoxin which is carcinogenic. Pumpkin pie is contaminated with dieldrin. Choose pumpkin pie or products made with organically grown pumpkins. Carcinogens in Vegetable Oil. Pesticides: Soybean oil is contaminated with dieldrin. Safflower oil is contaminated with lindane. Rancidity: Oils which are improperly stored can become oxidised, leading to the formation of oxygen- free radicals that are associated with carcinogenic processes. Carcinogens in Sweetners Aspartame, found in many brands such as Nutrasweet, Equal and many deserts, diet foods and soft drinks. The main concern with regards to the ingestion of Aspartame's in large amounts, is that it may contribute to the development of brain tumours. Cyclamates and Saccharin are carcinogenic. Carcinogens in Baby Food The embryo, fetus, infant and young child are more sensitive and susceptible to carcinogenic pesticide residues than the adult for the following reasons; 1) their smaller size, pound for pound, babies receive a greater dose. 2) the baby's liver often lacks certain enzymes required for breaking down pesticides. 3) babies' and toddler's immune systems are not as strong as those of adults. 4) the baby's cells undergo rapid growth and may be more susceptible to carcinogens than cells that are more static. In spite of these concerns the EPA's tolerance setting procedures have always been calculated for adults. A report had noted that 'millions of children in the United States receive up to 35 percent of their entire lifetime dose of some carcinogenic pesticides by age 5.... By the average child's first birthday, the combined cancer risk from just eight pesticides on 20 food exceeds the EPA's estimated lifetime level of acceptable risk of one-in-one million additional cancers throughout the U.S. population" These exposures can result in a high incidence of childhood and subsequent adult cancers. Meat and poultry contain a wide range of carcinogens, including pesticides, animal drugs, hormones, and radiation. A study by Dr. Mary S Wolff, associate professor of community medicine at the Mount Sinai School of Medicine in New York City, found that women with blood levels of DDT in the top 10 percent had four times the breast cancer risk as women in the bottom 10 percent. In addition, several other pesticide contaminants found in meat and poultry have been implicated as causing breast cancer. Apart from those substances which induce breast cancer, many other carcinogens are found in meat and poultry. Animal drugs: are widely administered to livestock, such as antibiotics. Forty of the animal drugs and pesticides known to occur as residues in meat and poultry are carcinogens. Furthermore, another eighteen cause birth defects. Growth Stimulating Hormones: Sex hormones, both natural and synthetic are given to livestock. Hormones are listed as known carcinogens by the International Agency for Research on Cancer. Left unanswered is whether uncontrolled estrogen dosages are involved in increasing cancer rates, now striking approximately one in three, in most western countries and the alarming increase rate of breast cancer. Nitrites: Cured meats such as bacon, ham, beef jerky, salami and luncheon meats contain nitrites. These substances inhibit the growth of dangerous botulism - causing bacteria, and maintain the meat's red colour. Although nitrite itself is not carcinogenic, it combines with naturally occurring chemicals called secondary or tertiary amines to form nitrosamines. This reaction will occur in the food itself while it is sitting on the shelf or in the refrigerator or being fried, but it also occurs within the stomach once the food has been eaten. Researchers reported that children who eat hot dogs cured with nitrite a dozen or more times monthly have a risk of leukemia seven times higher than normal. Furthermore, children born to mothers who consume hot dogs once or more weekly during their pregnancy are twice as likely to have childhood brain tumours. Charcoal broiling, grilling, oven cooking, and pan frying: Heavy charring of meat produces high concentrations of polycyclic aromatic hydrocarbons (PAHs) such as benzopyrene. PAH's form when the fat from the meat falls onto the hot coals.PAHs appear to be limited to barbecuing and grilling. Heterocyclic amines (HAs) are another group of cancer causing chemicals when broiling and pan frying meats. These are created when amino acids and others substances in meats are burned. Carcinogens in Fish Antibiotics: The raising of farm-raised fish is quite similar to the factory farmyard methods used for cattle. As with other livestock, fish are also given a wide range of antibiotics and other drugs. Prefer wild deep-water ocean fish whenever possible. Industrial Chemicals and pesticides: Seafood can be one of the most dangerously contaminated food sources in the diet today when uninformed shopping choices are made. The National Academy of Sciences estimated in 1991 that the risk of cancer to the average consumer who eats seafood can be some seventy-five times greater than normally acceptable guidelines. Some seafood items such as bluefish, farm-raised catfish, lake trout, Maine Lobster, and striped bass are contaminated with concentrations of industrial chemicals and pesticides hundreds to thousands of times greater than other food groups. Yet, when consumers make choices based on adequate information, seafood can be one of the safest, most nutritious foods. Carcinogenic industrial chemicals and pesticides commonly found in contaminated seafood include benzene hexachloride, chlordane, DDT, dieldrin, dioxin, heptachlor, hexachlorobenzene, lindane, and polychlorinated biphenyls. No fish from waters near agricultural and industrial areas, major inland waterways, harbors are safe to consume due to industrial chemical and pesticide contamination. Your best bet is to buy organically grown or whenever possible grow your own. To be realistic organic produce can be quite pricey ... when buying commercially grown fruit make sure to wash it in white wine vinegar or a very mild soapy liquid to wash off the pesticide before consumption. Radiation: Apple juice concentrate sometimes contain radioactive contaminants (cesium-137 isotopes) becuase of Chernobyl nuclear explosion in 1986. Waxes: contain fungicides such as benomyl and sodium orthophenyl phenate, both are carcinogenic.
