1 kg frozen lentils (can buy from ice-line they are easier to digest and cause less bloating) OR use dried brown lentils soaked overnight
2 large handfuls brown rice
1 large onion finely chopped
1 clove garlic lacerated
2 bay leaves
1 tsp turmeric
1/4 - 1/2 tsp cayenne pepper or Ethiopian Berbere spice
1/2 tsp dried oregano
1 tsp organic vegetable bouillon powder
2 tablespoons cider vinegar
2-3 tablespoons olive oil
2 strips wakame seaweed (optional)
4-5 cups hot boiling water
Add all ingredients in a pot. Allow to simmer and cook slowly until cooked and water has been absorbed. You can add more water if lentils or rice needs more cooking time. It is nice to leave it a little liquidy so that it is not too dry. Enjoy !
