31/1/2017 0 Comments Barbara's Super Easy Chia Coconut Squares / Energy Bars/ afternoon pick me up snack !1 1/2 Cups mix raw nuts and seeds e.g. almonds, walnuts, pumpkin and sunflower seeds 1 cup shredded coconut (sugar-free) 1/4 cup chia seeds 2 heaped tbsp cocoa powder 2 tbsp unprocessed honey or maple syrup 1 drop vanilla essence - or scrape vanilla pod 1 tbsp nut butter e.g. peanut butter Place nuts and seeds in a food processor. Pulse until quite fine with small bits so there is still a bit of a crunch. Add in the remaining ingredients and pulse for a minute. Pour into a lined tray. Pat down hard with the back of a spoon. Sprinkle some coconut and pat down again. Cut into squares or bars. Place in the fridge for about 30 mins to set. Enjoy ! Note: you can add in some super food sprinkles if you want like bee pollen, maca, cranberries, goji berries, beetroot powder, spirulina, hemp seeds, cacao nibs... etc... Get creative ! :))

1 kg frozen lentils (can buy from ice-line they are easier to digest and cause less bloating) OR use dried brown lentils soaked overnight
2 large handfuls brown rice 1 large onion finely chopped 1 clove garlic lacerated 2 bay leaves 1 tsp turmeric 1/4 - 1/2 tsp cayenne pepper or Ethiopian Berbere spice 1/2 tsp dried oregano 1 tsp organic vegetable bouillon powder 2 tablespoons cider vinegar 2-3 tablespoons olive oil 2 strips wakame seaweed (optional) 4-5 cups hot boiling water Add all ingredients in a pot. Allow to simmer and cook slowly until cooked and water has been absorbed. You can add more water if lentils or rice needs more cooking time. It is nice to leave it a little liquidy so that it is not too dry. Enjoy ! |
