Barbara's Super Easy Chia Coconut Squares / Energy Bars/ afternoon pick me up snack !
1 1/2 Cups mix raw nuts and seeds e.g. almonds, walnuts, pumpkin and sunflower seeds
1 cup shredded coconut (sugar-free)
1/4 cup chia seeds
2 heaped tbsp cocoa powder
2 tbsp unprocessed honey or maple syrup
1 drop vanilla essence - or scrape vanilla pod
1 tbsp nut butter e.g. peanut butter
Place nuts and seeds in a food processor. Pulse until quite fine with small bits so there is still a bit of a crunch. Add in the remaining ingredients and pulse for a minute. Pour into a lined tray. Pat down hard with the back of a spoon. Sprinkle some coconut and pat down again. Cut into squares or bars. Place in the fridge for about 30 mins to set. Enjoy !
Note: you can add in some super food sprinkles if you want like bee pollen, maca, cranberries, goji berries, beetroot powder, spirulina, hemp seeds, cacao nibs... etc... Get creative ! :))
